Potato Soup

1 T Butter1 med. onion5 1/2 cups mashed potatoes4 cups skim milk14 oz velveeta cheese spread
Directions
saute onion in 1 T butter. Place precooked (left over) mashed potatoes in a sauce pan, add milk, onions and cheese. Heat over low heat until the cheese is melted, stirring often
