Greek Salad Glaros

Ingredients
4 -5 small ripe tomatoes, chopped1/2 English Cucumber, chopped1/4 of a sweet onion, chopped1/2 a red pepper, chopped2 T Olive Oil2 oz. crumbled Feta4 T white balsamic vinegarChopped fresh basil (or dried oregano)Fresh ground pepper.
Directions
Chop it up, stir it well, mix the flavors. Eat right away, it's best at its freshest.

Great Salad for Two, if it's being eaten as a light meal with fresh potatoes and a bit of French bread.

    Great during Lenten Fasting, just omit the olive oil and serve with the potatoes. A little extra vinegar. My mom always made a version of this during Lent when I was growing up. - 3/4/09
