LC Pork Sirloin Chops with Mustard Sauce

Ingredients
4 boneless pork sirloin chops (about 7 oz each).5 tsp salt.5 tsp freshly ground black pepper1.5 tbsp enova oil.25 cup finely chopped shallots2 tbsp unsalted butter1 cup low sodium chicken broth.25 cup dijon mustard.25 cup reduced calorie coconut milk1 tsp rice flour (or other flour) or xanthan gum1 tsp honey
Directions
Preheat oven to 325 degrees. Heat heavy skillet over med-high heat until hot. Pat pork dry and sprinkle all over with salt and pepper. Add oil to hot skillet, turn to coat, then brown chops, turning once about 8 minutes total. Transfer to shallow baking pan, (reserving skillet) and bake uncovered until cooked through, about 7 minutes. Let stand for 5 min. Meanwhile, pour excess oil from skillet and cook shallots in butter over med heat, stirring until softened. Add broth and any juices from baking pan and boil, scraping up any brown bits, 2 min. Add mustard, coconut milk, flour and honey and whisk together. Simmer until sauce is thickened to your liking. Makes eight 3.5 oz servings.
