Chile con Carne Soup

Ingredients
1 large onion, chopped3 garlic cloves, minced2 Tbsp. extra virgin oil18 oz. lean ground beef4 c. low sodium vegetable broth2 c. water1 1/2 c. dry mixed beans-soaked overnight or boiled for 10 minutes1 (4 oz.) can chopped green chiles1/4 c. tomato paste1 Tbsp. soy sauce1 Tbsp. Worcestershire sauce1 1/2 tsp. brown sugar1 1/2 tsp. lime juice1 tsp. dried oregano1 tsp. ground cumin
Directions
In a large saucepan, saute onion and garlic in oil until tender. Brown beef. Drain. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, covered, for 3 hours. Add salt to taste. Add cilantro to serve (optional).
Makes 7 servings (about 2 full sized ladles full)
