Amy's rolled veggie omelet

Ingredients
3 eggs1 T olive oil1/4 cup of slice mushrooms1 cup chopped celery including leaves1 oz of grated cheese
Directions
Pour olive oil in heated pan. Swirl around till pan is coated. Add mush. and celery..stirfry till cooked. Add mixture of egg and cheese..swirl in pan till pan and veggies are covered with egg mixture. Turn heat down. As soon as edge start to bubble or cook a little bit take best cooked edge and turn a little bit over..wait a minute. Turn a little bit more over in same place. Wait a minute. Keep turning till whole omelet is in a roll. Turn whole thing over when rolled wait anothe min. Take out of pan, eat and enjoy.
