Green chile Calabazitas

Summer squash 3 medium size2 tomatos1 whole onion1.5 cups cheese(mexican four cheese3 cloves garlic3 tsp salt
First chop the summer squash, tomatos, onions and green chile into small pieces. You then saute the squash , garlica and onions together until a little soft. You then add about 1 cup water, tomatos, green chile, and salt in. Cook in medium heat until soft about 30 minutes. Then when soft add the cup and a half of cheese.

***** I meant to give 5 STARS ***** Calabacitas is a traditional New Mexican side dish that we eat regularly! Nice to see someone put it on here!! We don't even use the cheese most of the time -- but it's a great dish! It's a great way to expose yourself to Green Chile!! Look for El Pinto! - 4/13/07
