Anne's Cornbread

Ingredients
2 cups self-rising cornmeal1 cup lowfat buttermilk1 large egg3 Tablespoons butter
Directions
Preheat oven to 400 degrees. Add the butter to a large iron skillet and melt. Measure the cornmeal and place it into a medium-sized bowl. Add the buttermilk and egg; combine thoroughly and pour into the hot iron skillet. Bake until top crust is nicely browned (about 20-25 minutes).
