2 lb 96/4 extra lean ground beef1 large bag fresh spinich, or 2 small bags1-8 oz. box orzo pasta4 quarts Swanson fat free chicken broth4 eggs1-1/2 C parmeasan cheese1 tbs garlic powder1 tbs Italian Seasoning1/2 tsp salt1/2 tsp pepper
Pour chicken broth into large stock pot and heat to a boil. While broth is heating mix 2 of the eggs, Italian seasoning, garlic powder, 1 cup parmeasan cheese, salt, and pepper in a bowl. Heat a large skillet. Make meat mixture into tiny meatballs and brown well in skillet. When broth comes to a boil reduce to a simmer and add meatballs. Simmer for 20 minutes. Add orzo and simmer for 8 minutes until pasta is done. Chop spinach roughly and stir unto soup until it wilts, and there you have it.
