Apple Onion Panzenella (bread salad)

Ingredients
Dressing1 c sliced sweet onion (thinner caramelizes a bit I guess, if that matters)4 diced granny smith or other sour apples1/2 c white wine (or you can sub broth or water and use a couple spashes of vinegar to keep the acid)1/2 c apple juice (or cider)1 T ea: cinnamon and thyme1 tsp ea: garlic pwd and onion pwd1/2 tsp: cayennes/p to tasteCroutons1/4 c ea: olive oil and melted butter 8 slices whole wheat bread, cubed (stale is better)s/p, garlic/onion pwd Final assembly4 oz shredded sharp cheddar (1 c ?)[OR about 1 c dry toasted sunflower seeds]
Directions
Dressing: Mix ingredients together in skillet w/a lid, and let simmer over med low until onion and apples are well tendered. Taste for salt and pepper, adjust if needed.

Croutons: Toss until bread cubes are well coated. Spread out on tray(s) and toast on all sides under low temp broiler.

Final assembly: Toss croutons and dressing together panzenella style until everything is well distributed... Sprinkle top with the shredded cheese or the toasted seeds.
