Tilapia - Essaouira Style

2 4 oz. tilapia fillets1 tomato1 onion1 lemon1/4 cup of chopped parsley1/4 cup of chopped cilantro1 tablespoon of lemon juice2-3 tablespoons of olive oil1/2 teaspoon of ginger powder1/2 teaspoon of cumin1/2 teaspoon of pepper (to taste)1 teaspoon of salt (to taste)2 minced garlic cloves1 tablespoon of rosemary
Slice the onion, tomato and lemon. Put the onion slices in a baking dish and add one fish fillet on top of them. Add the ginger powder, cumin, garlic, parsley, cilantro, lemon juice and half of the salt to the fish fillet. Cover the first fish fillet with the second fish fillet. Put the slices of tomato and lemon alternately on top of the fish. Add the rest of the salt, the pepper and the rosemary to the whole dish. Drizzle with olive oil. Cover the dish with aluminum foil and bake for 45 min - 1 hour at 375 degrees.

This was amazing, I made it exactly as directed and WOW. I have been working hard on finding that perfect tilapia recipe and this is it! not even a hint of that fishy taste that makes us cringe, it left me wanting more, and I'm not a fish fan! absolutely excellent, I told everyone about it! - 2/24/09
