Special Fried Rice

6 cup cold cooked rice4 tbs peanut oil2 eggs, lightly whisked250g pork fillet, sliced200g cooked peeled prawns2 cloves garlic, sliced1 onion, chopped1 red capsicum, seeded and sliced2 tbs Soy Sauce½ cup Frozen Peas125g can corn kernels, drained4 chopped green shallotsextra soy or chilli sauce, to serve
1. Heat 1 tbs oil in a wok over high heat. Add eggs and scramble them as they cook. Remove when just set. Add pork, in batches and cook for about 2 minutes until golden brown. Remove. Add another 1 tbs of oil to wok and add prawns and garlic, cook for 30 seconds and remove. Add onion and capsicum and toss over heat for 1 minute. Remove.
2. Add remaining oil to wok and when hot add the rice, tossing to coat with oil and break up lumps. Keep turning and tossing over the heat for about 5 minutes until heated through. Add soy sauce and stir through well.
3. Return egg, pork and prawns to wok with peas, corn and shallots. Toss until reheated. Serve immediately with extra soy or chilli sauce.
