Cinnamon-Raisin Oatmeal Breakfast Cookies

1 cup packed brown sugar1 cup I Can't Believe It's Not Butter2 tsp vanilla extract1/2 cup egg beaters1 cup all purpose flour3/4 cup whole wheat flour1 tsp baking soda1 tsp ground cinnamon1/4 tsp table salt1 cup old fashioned oats1 cup Fiber One cereal1/2 cup raisins
Heat oven to 350.
In large bowl, beat brown sugar and butter w/electric mixer on medium speed until creamy.
On low speed, beat in vanilla and egg beaters until well blended.
Grind Fiber One in food processor to crumb consistency.
With spoon, stir in oats, crumb cereal and raisins.
On ungreased cookie sheet, drop dough by heaping TBSPs about 2" apart.
Bake 15-18 minutes or until set and golden brown. Immediately remove from cookie sheet to cooling rack.
Makes 15 large breakfast cookies, one cookie per serving.
