Quiche, Bisquick - Spinach & Low Fat Cheese

Ingredients
1/2 cup Bisquick4 eggs1 cup froz spinach1/4 cup raw onion1 cup raw mushrooms broken up2 cups skim milk1 TBL grated parm cheese2 slices low fat swiss cheese1/2 cup non-fat shredded cheddar cheese (or cheese of choice)
Directions
Preheat oven to 350.
Mix bisquick, eggs and milk together and set aside.

Then spray bottom of quiche pan with non-stick cooking spray. Break up frozen spinach into small pieces and layer bottom of pan, add onion, mushrooms and cheeses (except parm cheese).
Pour bisquick mixture on top of veggie and cheeses, stir slightly. Sprinkle top with parm cheese and bake for 50 minutes.

Makes 8 servings, 126 calories each.
