Whole Grain Banana Pancakes

Ingredients
1 c. whole wheat flour1/2 c. all-purpose flour1/2 c. quick oats1 tsp. cinnamon1 tsp. baking soda1/2 tsp. salt1 egg, plus 1 egg white, slightly beaten2 c. skim milk1 tbsp. canola oil1 tsp. vanilla1 small banana, mashed
Directions
Mix dry ingredients together in a bowl. In a separate bowl, mix the wet ingredients and then mix into the dry. Spray skillet with non-stick spray and heat. Drop batter (about 1/3 cupfulls) onto hot skillet. Cook until bubbles start to appear and edges look set. Flip and continue cooking until done. Serve with maple syrup. This recipe makes 12 pancakes.
