Eggless Caesar Salad w/ Chicken

2 chicken breasts3 Tblsp flaxseed oil1/4 c lemon juice3 cloves garlic, minced1/4 tsp sea salt1 head romaine, chopped1/4 c grated Parmesan cheese
1. Place chicken breasts in a nonstick pan and heat over medium heat. Cover and cook until the chicken is no longer pink and is completely cooked. Set aside.
2. In large bowl, combine the flaxseed oil, lemon juice, garlic and salt. Mix well.
3. Shred the chicken into bite-size pieces and add, along with the lettuce, to the bowl. Toss with the dressing and grated Parmesan.
