Tomato Borscht

2 tsp olive oil250g beetroot, grated1 small onion, chopped1 clove garlic, crushed2 (400g) cans chopped tomatoes1 c tomato juice570mL water + 1/2 bouillon cube or 1 tsp veg stock powder1 tsp cumin1/2 tsp cinnamon2-3 tsp soy sauce
Heat olive oil in a stock pot over medium heat. Add beetroot, onion, and garlic. Cover and cook gently for 10 minutes.
Add tomatoes, tomato juice, spices, water with bouillon/veg stock. Bring to a boil, reduce heat, and simmer for approximately 15-20 minutes, until vegetables are tender. Remove from heat and add soy sauce.
Cool slightly, then purée with an immersion blender.
