Spinach-Onion Salad

Juice of 1/2 Lime1 Tbsp. low sodium soy sauce11/2 tsp. Honey1 Red Onion, thiny sliced into rounds2 tsp. Canola Oil1 tsp. white-wine vinegar1/2 tsp. grated peeled fresh ginger8 C. Baby Spinach1 Tbsp. sliced almonds
makes 6 11/2 cup servings
1. To marinate the onion, combine 1 Tbsp. of the lime juice, the soy sauce, and 1 tsp. of the honey in an air tight container. Add the onion and toss to coat.
2. To make the dressing, mix the remaining lime juice, the oil, vinegar, the remaining 1/2 tsp. honey, and the ginger in a bowl.
3. Cover and refrigerate the onion and the dressing up to 1 day.
4. To serve, let the onion stand at room temp. for 1 hour. Drain and transfer to a large bowl. Discard the marinade. Add the spinach, dressing, and almonds. Toss well and serve
