Easy Frittata

Ingredients
3 medium potatoes (diced)6 slices of canadian bacon (cut into bite size squares)1 medium onion3 cloves of garlic1 cup egg substitute2 oz. skim mozzarellasalt & pepperdried basil
Directions
Spray large frying pan with cooking spray and heat to medium. Add diced potatoes, diced onions, and chopped garlic to the pan. Salt and pepper to taste. Heat unitl potatoes are tender. Add cut up canadian bacon and brown for 1-2 minutes. pour the egg beater over the top and add basil to taste. Allow the egg to set up then sprinkle skim mozzarella on top. Place pan in oven and broil on high to finish off the top (about 3-4 minutes or until cheese is melted). Slide frittata out of pan and cut like a pie. Serves 4.
