Mex Chocolate Chip Cookies

1 1/2 tbsp Stevia Powder (extract)2 1/2 cups Rolled Oats1 tsp Baking Powder, 1 tsp1 tsp Baking Soda, 1 tsp1/2 cup Refried Beans w/o the Refry1/2 cup Butter (softened)1/2 cup Brown Sugar, packed1/2 cup Extra Light Olive Oil 1 tsp Vanilla extract1/2 cup Nestle chocolate mini morsels
Preheat oven to 375 degrees
Put the oats in a blender or food processor and mix until it has the consistency of flour
In medium size bowl, combine oats, flour, baking soda & baking powder. Set aside
In a large bowl, using a hand held blender, mix the butter and refried beans first. When smooth, add the stevia and brown sugar. Beat in the oil and vanilla extract.
Hand stir in the flour mixture next and then the chocolate morsels.
Measure out 1 teaspoon of dough, space 1 1/2 inches apart on an ungreased cookie sheet.
Bake for 8-10 minutes.
Makes approximately 65 servings
