5 Egg Whites (or 1 1/4 C. Egg substitue)1-12 oz can Non-Fat Evaporated Milk12 oz Water1/2 C. Unbleached All Purpose Flour1 T. Vanilla Extract1 T. Splenda2 tsp. Baking Powder1 tsp. Cinnamon1/2 tsp saltPinch of Nutmeg16 slices Nature's Promise Oat and Honey Bread**
Beat all wet ingredients together in large shallow bowl. Add dry ingredients and wisk until combined. (There will be little lumps of flour left, it's ok, they will cook off)
Pre-heat large non-stick skillet on low. Spray with non-stick spray. Dip 2-3 slices of bread (depending on how big your pan is) in batter mixture and place in pan. Cook on low heat, flipping once, 3-5 minutes each side, until slightly firm. Serve topped with your favorite fruit!
Makes 8 - 2 slice servings
