1 pound ground turkey1 large egg1/4 cup bread crumbs ( I use panko)1 Tbls. chopped parsley1 clove minced garlicsalt & pepper4 cups chicken broth1 box frozen spinach (10 oz)1/4 cup grated parmesan cheese8 oz acini de pepe pasta
Mix together turkey, egg, bread crumbs, parsley, garlic and salt & pepper. Make into small meatballs. (My family likes them very small but it takes forever to make that way.) Place on cookie sheet and bake at 350 for 25-30 minutes or brown in a fry pan.
Cook pasta as directed until firm (do not overcook). Boil chicken broth. Drain spinach and add to broth. Add meatballs and pasta. Bring back to boil.
Top each serving with grated parmesan cheese.
