Sausage, Spinach and Cauliflower Soup

6 oz Hot Sausage, cooked and crumbled6 slices bacon, fried and crumbled1 medium to large head Cauliflower, chopped4 cups Chicken Stock8 cups Water1 Tbs hot pepper sauce2 pkg frozen chopped Spinach, thawed3 cloves Garlic, chopped
Fry bacon, drain on paper towel, and crumble when cool.
Fry sausage, crumbling small and drain. Add chopped cauliflower and garlic and saute 5 minutes. Add Chicken Stock and water. Bring to a boil and then simmer until cauliflower is soft. Add 1 tbs Hot Pepper Sauce (more or less to taste) and spinach and simmer an additional 10 - 15 minutes.
Serve plain or with a sprinkling of Parmesan, a tbs of sour cream or some salsa depending on your taste.
