5 Minute Vegan Pancakes

Ingredients

1 c whole wheat flour1 Tbsp sugar (evap. cane juice)2 tsp baking powder1/8 tsp salt1 c silk light (plain)2 Tbsp canola oil
Heat a skillet to medium-high heat.
Combine dry ingredients in a bowl and mix with a whisk. Add soymilk and canola oil, mix until smooth.
For 8 silver dollar pancakes, make each pancake a little over 2 Tablespoons of batter.
Flip when you see bubbles in the middle, or when the edges get stiff. Makes 8 one pancake servings.

These were awesome! I haven't had good luck with vegan pancakes in the past and was hesitant to try again. I'm SO glad I did! I halved the recipe (just cooking for me) and added cinnamon-maple powder to the batter. Made 2 large pancakes. Topped with Earth Balance and maple syrup. YUM! - 11/14/11
