Chicken Cheddar Cheese Soup

Ingredients
3 cups of 1% milk2 cups low sodium chicken broth16 oz cooked and shredded chicken breast1/2 cup chopped onion1 cup shredded carrots1 cup diced celery8 oz brick of cheddar cheese1 Tbsp of minced garlic1 tsp of coarse ground pepper2 cups of cooked long grain brown rice
Directions
Chop all vegetables and saute in a quarter cup of the chicken broth with the garlic until softened. Add milk and remaining broth and bring to a slow boil over medium heat. Add shredded cheese and stir til melted. Reduce heat to low. Add shredded cooked chicken breast and cooked brown rice. Add pepper and simmer on low for 30 minutes to an hour.
