Lentil Mint and Feta Salad

Ingredients

4 cups lentils cooked1 red pepper diced1/2 red onion diced1/2 cup fresh mint rough chopped7oz fat free feta cheese1 medium tomato dicedcumin to tastesalt to tastegarlic powder to tastepepper to taste1/8 cup olive oil 1/8 cup balsamic vinegar
place 2 cups dry lentils in pot and cover with water
Add garlic cloves to water
cook 15-20 min until done but still firm
While lentils are cooking chop vegetables, mint, and cheese
when lentils are done drain and run under cold water to stop cooking lightly salt and pepper them and put them in the fridge for 10 minutes
Take boiled garlic and add to blender along with vinegar, olive oil, cumin, and cayenne blend until smooth
Toss dressing over lentils and veggies in a large bowl
Makes about 6 two cup servings give or take
