Ingredients
2 cups 1% milkfat cottage cheese1/2 cup chopped red pepper1/2 cup chopped carrot1/2 cup chopped cucumber, pared if desiredsalt and pepper to tastelettuce leaves for serving
Directions
makes 2, 1 1/2 cup servings

1. Chop all vegetables
2. Measure 2 cups cottage cheese into mixing bowl. Add vegetables and salt and pepper to taste.
3. Spoon into individual lettuce lined bowls
