Slow Cooker Lasagna

Ingredients
1# bulk Italian Sausage1/2 cup chopped onion2 tbl minced garlic, or to taste6 cups spaghetti sauce1 15 oz can diced tomatoes, Italian style2 tsp dried basil1/2 tsp salt2 cups part-skim mozzarella, shredded15 oz. part-skim ricotta1 cup grated Parmesan2 zucchini, sliced1/2 cup each green, yellow, red and orange peppers, chopped15 uncooked whole wheat lasagna noodles
Directions
Saute sausage, garlic and onion. Stir in sauce, basil, salt and veggies. Mix 1 cup of mozzarella with ricotta and parmesan. Spoon 1/4 of sauce into slow cooker; top with 5 noodles broken to fit. Spread with 1/2 of the cheese mixture and 1/4 of sauce. Layer 5 noodles, cheese and 1/4 sauce. Top with remaining 5 noodles and sauce. Cover and cook on low 5-6 hrs until noodles are tender. Top with reserved cup of mozzarella. Cover and let stand until cheese is melted, about 10 minutes.
