Ingredients
1.5 lbs of 80/20 Ground Beef (can substitute ground turkey, chicken, or chuck) = 24 oz2 packets of French's Chili-O Original mix2 cans of Chunky Rotel2 cans of Bush's Dark Red Kidney Beans1 whole red onion, chopped 1 whole white onion, chopped
Directions
Brown beef in salt and pepper, drain.

Chop up both onions. I didn't chop them finely for this.

Add onions to crockpot and then add browned ground beef.

Add both cans of Rotel and both cans of kidney beans and stir everything together. Next, add both the chili-o powder packets and mix. Finally, add 4 cups of water and mix well.

Turn your crockpot on high for 3 hours and then turn it down on low for 2 until you're ready to eat. Or, if you're going to have it simmer all day, leave it on low.

This is just a guesstimate, but it yields about 16 1 cup servings. Perfect for WLS patients, but most will eat more, so adjust calories to your liking.
