Vegan Mushroom/Tomato Medley over Brown Rice

Ingredients
8 cups chopped mushrooms1/4 cup olive oil2 15.5 oz cans of Mexican Stewed Tomatoes4 cups cooked and hot brown rice
Directions
saute mushrooms in olive oil stirring occasionally. When just barely done add Mexican Style Tomatoes and heat through.

Serve over hot brown rice. Enjoy
