I'm a big fan of this "cheesecake" recipe and have been enjoying a version of this for many years. I use a Digestive biscuit, Light Philadelphia cream cheese (or Extra Light) and a tablespoon of sugar-free diabetic strawberry jam - superb! - 2/24/09

I used ricotta cheese with a couple drops of almond flavoring mixed in, instead of the cream cheese. Then I topped it w/ sliced fresh strawberries. It was wonderful! Thanks for the idea! - 2/2/09

I used one ounce of neufchatel cheese and one tablespoon of Polamer's Cherry All Fruit Spread. Then I took two sheets of graham crackers and broke them in half. I spread the cheese and fruit spread over two halves and topped with the other halves for a sandwich.
    Yummy! - 2/21/09

I used Low Fat Cinnamon Graham Crackers, Fat Free Cream cheese, and Smuckers no sugar strawberry preserves. I saved a bunch of calories and fat and it was Delish!!! - 6/12/09

Such a great idea! I was doubtful at first, and really only decided to try it on a whim, but I'm so glad I did! I used Reduced-Fat Cream Cheese and Cherry preserves, and I was actually pretty amazed at how easy it was to fool myself into thinking it was the real thing. Thanks! - 3/13/09

Wow! The kids loved it! I made a couple of adjustments. I used fat free cream cheese, softened and whipped with a fork. I then added a Tbsp of Wholesome Organic Blue Agave Syrup to sweeten it. I also used sugar free preserves on top and sliced a fresh strawberry for the garnish. Yummy! - 3/7/09

While this doesn't replace a good New York cheesecake, it is a very quick, easy and quite tasty cheesecake fix. Both the wife and myself were surprised at how close it was to cheesecake. The strawberry preserves add just enough sweetness to the cream cheese to prevent it from being bitter. - 2/16/09

Chocolate graham crackers with cream cheese are almost like oreos. I also do peanut butter and jelly on honey grahams. Great little snacks! - 3/12/09

So Simple and tasty. Eat it right away for crispy crackers but it is more like a cheesecake crust if you let it set for a little while. I used cinamon grahams and substituted fresh strawberry halved for the preserves - pretty and tasty and Oh So Simple! - 5/20/09

Thank you, thank you, thank you. When I crave something sweet (usually in the evening) I make these. Instead of graham crackers, I use arrowroot cookies. It is yummy and totally satisfies me.

this rocks !! for me (being lazy), having to make them 1 at a time means I will only make one and will only eat one. I have a real weakness for sweets, and I love cheesecake....so this just might do the trick. I haven't tried this yet, but I trust everyone's opinion on this one. - 3/18/09

I made this with low fat graham cracker crust & Greek style yogurt, which has 0 grams of fat & 14 Grams of protein, with fresh strawberries or fresh blueberries, so good, thanks for the idea! Try eating just one slice! - 3/15/09

i love sweets and this has definitely fulfilled my craving. i've had them for the past three days. the calorie count seems a little low. and based on the graham crackers that i have, (cinn. honey grahams) 1 serving is 2 whole squares (which would be 4 if broken) so you can have more than 1 sq. - 3/13/09
