Basic Easy Egg Roll-Baked

1 onion chopped4 cloves garlic minced1.5-2 tsp ground fresh ginger (not powdered)5 cups cabbage shredded (or bagged cole slaw mix works perfect)2 Tbsp soy sauce1 Tbsp Rice Vinegar16 Egg roll wrapperswaterCan add 1 cup cooked chopped meat to this basic mix to change, recommend roast pork, shrimp or minced portobello mushrooms, add at the same time as cabbage.
1. Saute ginger, garlic and onion until onion is almost clear
2. Add cabbage and saute a few minutes until soften
3. Add soy sauce and rice wine, mix well and heat mixture through
4. Remove mixture from heat
5. Place egg roll wrappers flat and add about 1.5-2tbsp of mixture 2/3 of the way down the wrapper
6. Use the top 1/3 t cover and tuck, roll over 1/2 turn, flip in ends, moisten your finger in the water and run along final edge, continue rolling until it gets there
7. seal, place on ungreased baking sheet seam down, continue with rest of rolls
8. Bake at 400 degrees for 12-15 minutes
