1 box Betty Crocker Supreme Moist White Cake Mix1-12 oz. can of diet 7 up1 large box sugar free jello, any flavor1 container fat free Cool Whip
Add can of Diet 7 up to cake mix in place of eggs, water, oil, etc. Bake in 13x9 pan for 25 minutes. After cake has cooled, poke holes in cake with a fork. Make jello using 1 1/2 cup boing water and 1 1/2 cup cold water. Pour liquid jello over cake. Let set in refrigerator for 3-4 hours. Top with cool whip. Cut into 12 equal squares.

I thought this recipe was ok to good. I did use Sprite instead of 7up but not sure if that made the difference. It still seemed to be missing something. I am going to try some of the other recipes out there. Some use applesauce, prepare the white cake as normal, etc and call it a poke cake. - 8/30/10
