Individual Apple Pies w/Phyllo Dough Crust

Ingredients
Ingredients: 2-3 Medium ApplesBrown Sugar, 1 tbsp packedCinnamon, ground, .5 tspVanilla Extract, .5 tspCornstarch, 2 tbspPhyllo Dough, 5 sheet doughButter, unsalted, 1 tbsp
Directions
Core, peel and slice apples, then place them in a saucepan w/ about 1/4 cup of water on medium heat.
Cook w/lid on for about 3-4 minutes, or until done
Remove apples from pan, but leave 1/4 c of water
Add brown sugar, cinnamon, and vanilla. Cook one minute
Mix cornstarch w/ a little bit of water and add to pan, stir until mixture is thick then remove from heat

Preheat Oven to 375 degrees
Fold one phyllo dough sheet in half lengthwise. Place apple mixture at one end, and fold up into triangle shape. Repeat for remaining dough and apples.
Place pies on cookie sheet and brush lightly w/ melted butter
Bake for 10-15 min (or until browned and crispy)
