Homemade Chicken Noodle Soup

1 pound skinless, boneless chicken breast1 tablespoon olive oil1/2 teaspoon salt1/2 teaspoon pepper2 quarts chicken broth1/2 tablespoon dried poultry seasoning1 cup celery, diced1 cup carrots, sliced3 cups egg noodles1/4 cup fresh cilantro
~Preheat oven 350
~Lay chicken on a baking sheet and rub with olive oil. Season with salt and pepper. Bake in oven for 30-40 until fully cooked.
~Meanwhile heat chicken stock and seasoning in an uncovered stock pot; Add carrots and celery simmering until vegetables are tender.
~Cut up chicken breast into bite sized cubes; add chicken, green onions, cilantro and noodles to stockpot. Cook until noodles are tender, 8-10 minutes.
Makes approximately 6, 2 cup servings.
