Black Bean Enchilada Bake

Ingredients
2 cups black beans (cooked)0.5 cup chopped onion1 can diced tomatoes1 can vegetarian refried beans1 can enchilada sauce1 cup mozzarella cheese, shredded3 corn tortillas1 small can sliced black olives
Directions
Cook up the beans, onion and tomatoes in a large pan. Preheat the oven to 350 while you are doing this. In a 13*13*13 pan (or thereabouts) place tortillas on bottom. Spread vegetarian refried beans over them. Dump heated tomatoe/bean mix on top. Add can of enchilada sauce, olives then mozzarella cheese.

Bake at 350 for 20 min or so.

    This was nummy. We only had two corn tortillas, so ours was on the runny side, but I just added some extra black beans at the end and it worked great! It felt really cheesy and decadent for not many calories. This is a keeper! - 4/4/09
