Protein Pancakes with Fruit and Nuts

Ingredients
1/2 c. Egg beaters 1/4 c. oatmeal or Sweet potato pancake mix1/4 tsp. baking powder1/3 c. mashed yams or sweet potatoes1/2 tsp vanilla extract1/2 tsp. cinnamon1/2 oz. almonds, sliced or slivered1/4 c. blueberries1/4 banana, cubed
Directions
1. Whisk all ingredients together with a fork until pancake mix is completely dissolved (if using sweet potato pancake mix, let stand 5 min. for the mix to reconstitute).

2. Spray Pam in nonstick skillet and heat. Use 1/4 c. measure to ladle batter into skillet. Turn
when bubbles appear on the top and cook on the other side.

3. Top with 1 Tbl. low-fat/low-carb. strawberry jam (20 cal.)
