4 Medium Zuccini, Diced4 Medium Crooked Neck Squash, Diced4 Green Onions, Minced (all the green part, too)1/2 Sick Butter or Oil (what ever you use to cook with)3 Hefty Garlic Cloves, Minced1 10oz Can Rotel chile and Tomatoes, Chopped1/4 Cup Diced Ortega Chiles1 Cup grated Colby Cheese (optional)
Put the minced green onions, garlic and butter in a pot and allow to saute briefly together. Add the squash and zuccini and mix well. Add the Rotel Tomatoes and the chiles and turn the fire down to simmer. Allow to cook uncovered for about 10-15 minutes. Stir frequently. Drain off excess liquid. Lastly stir in the grated cheese and serve. Serves 8
