Chicken with Black Beans

Ingredients
cooking spray1 medium onion, chopped1 can black beans, drained1 can diced tomatoes1 T. chili powder1/2 cup brown rice3 T. salsa8 oz. boneless, skinless chicken breast tenderloins (4)1/4 cup chicken brothgarlic powder and pepper4 T. light sour cream1 avocado, peeled, seeded, and chopped
Directions
makes 4 main dish servings

Spray a saucepan with cooking spray, then add chopped onion and cook over medium heat until lightly browned. Add beans, tomatoes, chili powder, salsa, and rice. Bring to a boil, then reduce to low and let cook for 50 minutes, adding water as necessary for the rice. When it has been cooking for 30 minutes, spray a frying pan with cooking spray and heat to medium-high. Sprinkle chicken breast pieces with garlic powder and pepper. Brown in frying pan 2-3 minutes per side, then add chicken broth, cover, and reduce heat to low. Let cook 10-12 minutes until chicken is cooked through. To serve- divide black bean mixture into 4 servings, add a chicken breast on top of each, then top with a tablespoon of light sour cream and 1/4 of the avocado.
