Potato Mushroom Soup

Ingredients
1 lb 96% fat free ham, cubed2 1/2 lb Red Potatoes, medium dice1 can 94% Fat Free Cream of Mushroom Soup8 cups Skim Milk1/4 cup Flour1/4 cup I Can't Believe It's Not Butter, Light Spread1/2 Medium Onion, medium dice1 tsp Salt1/2 tsp Black Pepper
Directions
Boil potatoes in a large soup pot until tender. Drain and set them aside, saving 2 cups of the cooking liquid. Melt the butter in the soup pot and saute the onions over medium heat until translucent. Add the flour and stir constantly until slightly browned. Slowly stir in the cooking liquid, the milk, the soup, the potatoes, the ham, and the pepper. Simmer, stirring frequently for another 10-20 minutes until thickened to desired consistency. (This can be served with shredded cheese over the top for more calories.)
