Famous Dave's Cornbread Muffins

Ingredients
1 Cup yellow cornmeal1 Cup stone ground cornmeal1 (9oz.) package yellow cake mix2 t. baking powder1 t. salt1/8 t. cayenne pepper1/2 C milk1/2 C buttermilk1/4 C vegetable oil2 eggs, beaten2 T light brown sugar2 T honey1 T miracle whip light
Directions
Combine cornmeals, cake mix, baking powder, salt, and cayenne in a bowl, set aside. Combine milk, buttermilk, oil, eggs, brown sugar and honey in a bowl and mix well. Add to the cornmeal mixture and mix gently - there should be no lumps, but do not overmix. Fold in the miracle whip.

Let rest, covered, in the refrigerator for 30 minutes or up to overnight.

Preheat the oven to 400. Spoon the cold batter into a greased muffin tin. Bake for 25-30 minutes or until a cake tester comes out clean and the top is golden brown.

     These were amazing! I used egg subbstitute instead of real egg and all yellow cornmeal instead of part stone. And also 8oz creamed corn instead of MiracleWhip. - 2/28/11

     This was a total waste of my time and money. This surely does not taste like Famous Dave muffins...NOT AT ALL. Like someone else said it came out super dry and crumbly and hard. Looked nothing like the actual muffins and tasted awful. All went in the trash. Don't waste your money and time. - 11/18/11

     The only reason I gave it 4 instead of 5 is because they're dry and crumbly, not moist. It was WAY better than the other attempt we made though. I've seen a glaze recipe come with a different one so I may try that glaze with this one if I can find it. - 8/7/11

     Ive made this recipe 3 times. Mouth watering every time! Be careful not to overbake....highly recommend doing the toothpick test at around 25 mins of baking. Oh so delish! - 12/28/10

     I calculated the total calories per serving and it turned out to be 266.8 calories for 9 servings. That included the cake mix. I used Jiffy yellow cake mix and it turned out amazing!! Just like the real thing! Next time I will use Splenda brown sugar to get rid of those calories. - 10/28/10

     I like cornbread, but my boyfriend LOVES cornbread. I was told about Famous Dave's cornbread by a coworker who says it is the best cornbread he has ever had. I decided to look up the recipe and try it. It was fantastic and a huge hit. I left out the Miracle Whip but added in a can of cream corn YUM! - 9/28/10
