3/4 cup each of brown rice and dried lentils1/4 c. chopped onion, chopped1 small carrot chopped1 small stalk celery chopped3 cups broth (I use chicken, can use beef or vegetable as well)2 T - 1/4 cup salsa ( or use tomatoe sauce or canned tomatoes if prefered)salt, pepper to taste1/4 tsp garlic powder1/4 tsp cumin dash of cayenne pepper (to taste) if desired
rinse lentils and brown rice in a strainer, add all ingredients to pan, bring to boil, reduce heat, let simmer 45 mins to 1 hour. Stir once in a while. (Or you can bake in 350 degree oven for 45 mins to 1 hour to avoid scorching pan) unitl liquid is absorbed and rice is tender.
top with additional salsa if desired. serve as main dish with salad, or roll up in tortillas with cheese and lettuce.
