Cosmic Curry

Ingredients
227g cubed potatoes110g diced carrot70g diced leek70g broccoli100g diced zucchini180g fresh spinach2 tablespoons ghee (butter)340ml coconut milk light1 tbsp ground ginger1 tbsp ground cumin2 tsp ground coriander1 tsp ground cinnamon0.5 tsp turmeric1 tbsp veg stock powderPinch of sea salt
Directions
Saute the potato, carrots, leeks, zucchini and broccoli in 1 tbsp ghee for about 10 mins.
Add the spinach and tomato and cook for about 3 mins.
Add all other ingredients, plus 230ml of water and bring all to a fast boil.
Simmer until potato is cooked through.
If not needed immediately, leave to stand and it will soak up more flavours.
When ready to eat, reheat.
Serve alone, or with brown rice, or with wholemeal pitta bread.
