Laura's Meatloaf

1 lb. lean ground beef1 sm. onion, chopped1/2 bell pepper, chopped1 clove garlic, minced1 cup of cooked rice1 cup dry bread crumbs16 ozs. tomato sauce, divided1 egg1 tsp salt1/4 tsp black pepper
Preheat oven to 350 degrees.
In mixing bowl combine all ingredients except the tomato sauce. Add 1/2 cups of the sauce. Mix well. Spray a loaf pan or a 8 x 13 pan with non-stick cooking spray. Form mixture into a loaf shape patting firmly so mixture forms tightly. Place into pan. Bake for 1 hour. Pour remainder of tomato sauce over the top and continue to bake for 15 minutes. Let rest for 10 mins. and slice.
