Ingredients
canola spray oil1/4 cup chopped onion2 boneless, skinless breast1 large potato cut into cubes1 small red pepper cut into strips1 small green pepper cut into strips1/2 cup canned sweet corn1 - 8 oz can tomato sauce1/4 cup catsup5 oz cola/diet cola12 oz watersalt and pepper to taste
Directions
Coat a large deep skillet or pan with a few spays of canola oil. Saute onions, add chicken and lightly brown. Add potatoes, cook and stir for a few minutes. Add cola/diet cola, tomato sauce, catsup, and water. Mix well. Cover and cook on low heat for 10 minutes. Mix and add peppers and cook, covered until potatoes are tender, about 15 minutes. Mix in corn, simmer for 5 more minutes. Salt and pepper to taste. Makes at least 4 servings. Optional - serve over rice.
