Sweet Pea Guacamole

Ingredients
2 Tbsp Extra Virgin Olive Oil3 Tbsp Fresh Lime Juice1/4 Bunch Fresh Cilantro2 Seed, Stemmed Serrano Chili Peppers1 Lb Thawed Frozen Peas1/4 tsp Ground Cumin1 tsp Salt1/4 Medium Red Onion, finely chopped
Directions
Put first 4 ingredients in a blender or processor and process to a coarse puree.
Add peas, cumin and salt; puree until smooth.
Transfer to a medium bowl and stir in Red Onion. Adjust seasonings and serve at room temperature with tortilla chips.
Makes 2 Cups

    I tried this today - bit hit with me and others who tried it. Would like to add a clove of minced garlic and a sprinkle of sea salt instead of 1t of salt. The serrano peppers add a nice heat. - 4/3/11
