Whole Grain Oriental Rice

Ingredients
2.25 cup water1 cup reduced sodium chicken broth1.5 cup PC Organics Brown and Wild Rice Blend2 tsp olive oil2 tbsp finely chopped onion2 tbsp finely chopped green pepper1/2 cup chopped pecans1/4 tsp ground sage1 cup finely chopped celery5 oz. sliced water chestnuts1/4 tsp nutmeg
Directions
1. Bring water and stock to a boil in medium size saucepan.

2. Add rice and stir. Cover and cook for 30-40 minutes.

3. Remove pan from heat. Reserve.

4. Heat oil in large nonstick skillet.

Saute onion and celery over moderate heat 3 minutes. Stir in remaining ingredients including reserved cooked rice. Fluff with fork before serving.
