Spanish Rice

Ingredients
2 C. long grain brown rice1 Tbl. olive oil1/4 C. chopped onion1 can diced tomatoessalt pepper
Directions
heat oil in a pot. saute onions and rice until rice just starts to toast. ad tomatoes and cover he rest of the way with water. (brown rice is 1C. to 2C. water). season with salt and pepper and cover and cook for about 40 minutes or until fluffy.
