Ingredients
4 slices ciabatta bread1 large ripe tomato, diced2 scallions, finely sliced1 small fresh mazzarella cheese, part skin milk, diced1/2 ripe avocado, skinned, pitted, and diced1/2 tbsp balsamic vinegar2 tbsp extra-virgin olive oilSalt and pepper to taste2 tbsp shredded fresh basil leaves, to garnish
Directions
Toast the ciabatta bread.
Mix the tomato, scallions, mozzarella cheese, avocdo, balsamic vinegar, and half the oil together in a bowl. Season to taste with salt and pepper.
Drizzle the remaining oil over the ciabata toast and top with the tomato mixture.
Garnish with the basil and serve immediately.
