Bobby's Pimento Cheese Recipe (low fat version of Paula Deen recipe)

Ingredients
* 1 (3-ounce) package light cream cheese, room temperature * 1 cup grated 2% sharp cheddar * 1 cup grated Monterey Jack * 1/2 cup light mayonnaise * 2 to 3 tablespoons pimentos, smashed * 1 teaspoon grated onion * salt & pepper to taste * sprinkle of garlic powder
Directions
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for crudite or as a sandwich filling.

    Amazing! Never have been a fan of store bought pimento cheese spreads. This recipe is awesome! I am IN LOVE! I could eat the whole batch by myself. I took it to Mother's Day lunch and everyone loved it. My mom said it tastes just like her granny's recipe! - 5/10/10
