Ingredients
1/4 c dry Japonica rice1/2 c dry basmati brown rice1 c water1/2 c whole milk1/2 c fat free 1/2 & 1/21 1/2 c lite coconut milk2 Tbls honey1 1/2 Tbls Splenda1 Tbls raisins1/4 c craisins8 dried apricot halves, chopped1/4 c cashew halves1/4 c sliced almonds9 cardamon seeds1/4 c flax seed meal
Directions
Cook rice in water and milk (not coconut or 1/2 & 1/2 yet). Add flax, honey, splenda, coconut milk and 1/2 & 1/2 when rice is soft. Let thicken a bit then add dried fruit and cardamon. In the last few minutes add nuts and cook til desired consistancy. Should be like rice pudding.
